Chiefly because too little attention had been given to the peculiar nature of the Hungarian wheats. Whoever had given himself the trouble of making the experiment of grinding hard and brittle wheats by the low-grinding process, and also soft wheats by the high-grinding process, had learned from the results that the flour produced by the former contained many small particles of broken-up bran, and the flour itself was more in the form of very fine middlings than the usual nature of flour. On the other hand, the flour obtained from the soft wheats, although good in quality, would have been produced at too heavy an expenditure of power, owing to the large amount of machinery used in excess of the actual requirements. In moist northern climates the wheats to be dealt with were chiefly of a soft nature, the bran of which was tough, whilst in the south, under the influence of a hot sun, the native wheats were of a brittle nature, both as regarded the berry and the bran. The main object of every system of milling was to produce flour free from particles of bran, and bran free from flour, and this, too, with a minimum expenditure of power, labour, and cost of every description. It stood to reason that it was easier to achieve this object in the case of wheats, the berry of which could be readily broken up, and the bran of which was of a tough nature, than it was to deal with hard and brittle wheats where this was not the case.
